It seems this vintage just gets better and better with age. Though the wine seemed to be as perfect white wine as it could be possible a few years ago, it seems to have become even better. Even though the wine showed some oxidative characteristics back then, they haven't grown with age, unlike the depth and complexity - which was already something remarkable! Even though the wine is relatively low in acidity for a white Musar, it is still easily one of the best white Musars I've had due to its incredible, peerless complexity. Most likely one of the greatest wines I will ever taste.
After an hour or two, apricot developed on the early palate and almond flavours on the middle, together with spicy citrus notes. It continued to develop (including the gentle caramel flavours mentioned earlier) over many hours.
During our tasting panel, we discovered two of Château des Charmes signature wines that we just HAVE to bring to your attention to consider adding to your Savvy Selection wines. Simply put, these wines were breathtaking.

I had the opportunity to spend time with Brian and Alan, walking the Carp vineyard to see the results of the KINfolks’ commitment to a challenging viticultural landscape. Planted only three years ago, the Carp vineyard slopes south and west immediately off the Carp Ridge, overlooking the farms of the Ottawa Valley. This block includes three different soil types, the upper slope characterized by loamy sandy soil, the mid slope showing exposed limestone and loam (the rocky soil has the potential to hold and radiate the sun’s heat), while the lower slope is largely clay loam over limestone bedrock.
Unless you have a cave system underneath your house, this environment isn’t necessarily readily available in most homes and apartments. Fortunately, there are other options available. A wine chiller with the racks taken out can make a great spot to age beer. An extra refrigerator with a thermostat may also suffice, but keep in mind that refrigerators are very dry and may cause corked beers to dry out over time. If you have a basement, underneath your stairs or in a in a dark corner may be adequate places to age your beers. If you don’t have a basement, a small closet may be a suitable option. A few years ago I had this wine multiple times and it was constantly one of the most impressive white Musars - both in verticals and on its own. However, the wine seems to have been peaking then, since now the overall feel here is noticeably less favorable: the wine still retains that impeccable complexity, but has lost intensity along the way, making the wine come relatively mild and underwhelming in aroma and taste. Furthermore, this has always been a relatively low-acid vintage for a white Musar. While the rich, concentrated and complex fruit has always made up for that lack of zip and verve, now the wine starts to come across as rather tired and heavy. It is still very delicious, but knowing how extraordinary this wine is at its best, this is a far cry from those experiences. Nevertheless, solid value at 30€.

Bare bones minimum, these are the two things you need to begin storing beer (duh). However I, and you will, want to maximize space in this thing to fit as many beers as possible. To do this, it is necessary to build internal shelving that is strong enough to hold the weight of the bottles safely, yet not so bulky as to reduce maximum storage. I came up with a plan to create a shell of the internal dimensions that will accept adjustable shelving so that as the size of my bottles change, so too can my shelving arrangement (this will make more sense as we get to pics). After talking with my dad, who has become a local handyman since retiring from LAFD, we agreed that while Starboard is an ideal material, it may be smarter to start with something a little more affordable. Golden colour, oxidative nose and a big but oxidative flavour. Minerally fruit and some depth but left me a bit non-plussed.
Worryingly oxidative aromas but balanced by an almost tropical fruit profile on the palate and good acidity. Very much alive and with plenty of time left.

The same way foods transform on the stove, wine changes as it experiences high temperatures. First, tannins become more noticeable and wines take on a tangy, astringent character. Instead of a smooth and supple mouthfeel, wines feel rough and more one-note on the palate. Fruit flavors often become secondary to unpleasant acidity. In dry climates, corks shrink as they lose moisture, leading to leaky bottles and a sticky mess. Other closures may be pushed upward and through the tops of their bottles as wine expands during temperature spikes. Older wines, and those with natural corks, are also at a higher risk of spoilage since they’re inherently more delicate than young wines and those sealed with synthetic closures. Anytime a wine from your rack is leaky, or tastes completely astringent, it’s probably been cooked.

Following the style of the three previous harvests of the wine and celebrating the cool edge of the Clare Valley’s climate, the Grosset Nereus 2021 rejoices in its restrain, medium-body and healthy rusticity. There is a hint of underlying earthiness to the wine rather than the lusty oakiness which many Australians have come to expect of the variety. In 2021, the Grosset Nereus has primal aromatics of dark plum, black cherry and mulberry which flow through onto the palate. This features a hint of pepper and well-integrated briary oak that is evident yet never dominant. Its satisfying fleshy texture is balanced by tongue-coating gentle.
Cork is a natural substance that has been used for thousands of years by multiple ancient civilizations. We now associate it mostly with wine stoppers, but I didn’t know how that usage came to be until I did some research.
When I last wrote about Pondview Estate Winery, it was 2021 and Lou Puglisi and his family had just opened a tasting room to showcase their first vintage as winemakers. The family had been growing and selling grapes for 30 years; in fact, in 2008 Lou had been crowned Grape King, a highly acclaimed industry award provided by Ministry of Agriculture to recognize the finest grape growers in Ontario. As a prize, Lou was offered an all expense paid trip to the Okanagan British Columbia, where he visited a number of small, family-owned wineries. This trip sealed the deal – it convinced him that the time had come to take the next step, and to begin making wine.

Not a dessert, but more akin to a present-day pot pie, filled with meat and flavored with spices, a glass ring was concealed in the pie, and the maiden who was served the portion containing the ring was deemed the next person destined for marriage—in a tradition similar to the tossing of the bouquet or garter at modern Western weddings.

The decision was made to buy three acres of fields on Closson Road in Prince Edward County. Tim immediately fell in love with the gravelly soil and they agreed to plant vineyards. The Kuepfer family continued to live in Toronto during the week and spent the weekends in The County, eventually planting rootstock for the three Pinots – Noir, Gris, and Meunier – and Chardonnay.

And since drinking-glasses are always situated to the upper-right side of the place-setting, it only makes sense for each guest to receive the bottle or decanter conveniently into his right hand as he receives the vessel transferred from the left side of the diner seated to the immediate right. But practicality and logistics tend not to make for interesting table-tales. So many a myth has been offered to explain the tradition. Similarly, it is customary not to rest the vessel of Port onto the tabletop while being passed around the table.
